Apple & Cinnamon Oatmeal Cupcakes Recipe
makes 12 cupcakes
a)
1 Egg
1 cup Vegetable Oil
1 cup Milk
1/2 cup Maple Syrup
1/2 cup Light Brown Sugar
3 tbsp. Plain Yogurt
b)
2 cups All-purpose Flour
1 cup Rolled Oats
2 tsp. Ground Cinnamon
2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Salt
1 Large Apple
1. Preheat oven to 190℃ & line a muffin tin.
2. Whisk all dry ingredients in b) together. Peel and chop apple into small cubes.
3. In a large bowl, whisk all a) ingredients together until combined. Add 1/3 of the dry ingredients into the egg mixture and gently beat until mixed.
4. Repeat the process until all dry ingredients are well mixed with the egg mixture. Then fold in the apple cubes.
5. Fill each paper to around 70-80% full. Bake for 20-22 minutes.

* I topped off the cupcakes with cream cheese frosting to get the snowy effect for my christmas tree toppers.
* The cupcakes alone taste really good, or simply serve them hot with whipped cream or vanilla ice-cream!
